Course description

Learn how to create delicious and authentic Indian food, include samosas, pakoras and curries and take away your food to eat later on.

What you will learn

The course will cover starters, main course and side dishes.

How you will learn on this course

Some recipes will be demonstrated by the tutor, others followed by tutor guidance.

How you will be assessed on this course

1. Recognise spices and their uses. 2. Able to follow recipes and understand the importance of each stage. 3. Demonstrate how to cook Indian dishes using minimum spices. 4. Be able to prepare meat and vegetable curries and which spices to use. 5. Have knowledge of nutritional value of dhals and how to prepare dhals. 6. Able to identify properties of basmati rice and correct ratios of water to cook rice. 7. Gain understanding of the use of gram flour to make a variety of starters – Aubergine fitters, pakoras, onion bhaajis. 8. Demonstrate how to prepare easy dips for starters. 9. Gain confidence in using spices to be create own authentic recipes e.g. spicy salmon and sticky cumin rice. 10. Have knowledge of variety of Indian Flat breads.

What you need for your course

Apron, containers to take prepared dishes home. 2 non-stick saucepan with lids. (7 or 8 inches approx.)

What you need to bring to the first class

Apron, containers to take prepared dishes home. 2 non-stick saucepan with lids. (7 or 8 inches approx.) First week you will be cooking: • Cumin Rice. • Lentil Dhal. • Potato and Baby spinach curry. Tutor will provide all ingredients and spices for the first session.

Additional information

At the beginning of the course, you will have an induction to the College and the course. Your tutor will ask you to complete an Individual Learning Plan (ILP) and agree your personal learning goals. All documents are a requirement of the Funding Agency. All students on courses funded by the ESFA must complete a Learning Agreement and ILP.
