Course description

Discover how to create a variety of delicious recipes from different regions of Italy. Students will prepare, cook and taste their own dishes and their own wine, if preferred. You will take home not only your food, but also heaps of new experience and useful tips. Ingredients are not included in the course.

Enthusiasm and enjoyment of Italian food.

What you will learn

There will be a suggested scheme of work discussed at the first lesson which can then be adapted to suit student's needs. The course covers starters, salads and main courses. 1. Construct a traditional Spaghetti Bolognese sauce and Carbonara Sauce. 2. Make a seafood risotto and baked fish dish. 3. Put together a Tiramisu & other classic Italian dessert. 4. Construct a Baked Aubergine with Cheese and Tomato (Melanzane alla Parmigiana) and additional side dish once discussed with the class.

How you will learn on this course

Some of the lessons will be demonstrated by the tutor, and the rest will be students following a recipe with personal guidance by the tutor.

How you will be assessed on this course

1. Identify and name a range of fresh and dried herbs. 2. Learn how to use a knife correctly, safely and effectively. 3. Select pasta suitable for each chosen recipe. 4. Select suitable rice for risotto (following class discussion). 5. Cook a risotto dish with mushrooms or a suitable ingredient of your choice. 6. Prepare and design a range of Italian Antipasti and salads. 7. Demonstrate skills to cook spaghetti al dente. 8. Present a main course with fish or meat. 9. Present a vegetarian main course, Melanzane Parmigiana (aubergine). 10. Make your own homemade breadcrumbs, used with many Italian recipes. What you will be expected to do outside your lesson time

Preparation in advance of the class is very important. Students have to shop for the ingredients required and sometimes pre-prepare food the day before. Experiment with flavours and practice chopping techniques.

What you need for your course

Good quality non-stick cookware and the ability to carry equipment to the lesson as the College provides only a limited number of equipment. Students must wear the following appropriate footwear, flat closed in shoes to comply with the college Health and Safety Policy.

What you need to bring to the first class

Pen, a notebook and a file. First Recipe: Bolognese Sauce Ingredients; Minimum amounts 250 g (9 oz) Minced beef 250 g (9 oz) Minced pork (shoulder) 90 ml (3 fl oz) Extra virgin olive oil 1 Onion - medium size (finely chopped) 1 Carrot - medium size (finely chopped) 2 Celery stalks with some leaves (finely chopped) 1 Beef stock cube (use this to prepare about 400 ml - 3/4 pint stock) 150 ml (1/4 pint) White wine 100 ml (4 fl oz) Sieved tomatoes (passata di pomodoro) 150 ml (1/4 pint) Milk Salt and black ground pepper for seasoning. Carbonara Sauce Ingredients: 400 g (14 oz) Spaghetti, long life. 150 g (5 oz) smoked streaky bacon slices (very thin - 1 mm thick) 50 g (2 oz) Pecorino cheese or Parmesan - (freshly grated) 15 ml (1tbs) Extra virgin olive oil 2 Eggs, 80 ml (3 fl oz) White wine, black pepper corns for seasoning. Additional information

At the beginning of the course, you will have an induction to the College and the course. Your tutor will ask you to complete an Individual Learning Plan (ILP) and agree your personal learning goals. All documents are a requirement of the Funding Agency. All students on courses funded by the ESFA must complete a Learning Agreement and ILP.
