Course description

Preparing learners for employment in a catering role, you will gain a firm grasp of the importance of food hygiene and knowledge of the systems, techniques and procedures involved when preparing food for the commercial and voluntary sectors, or at home.

Entry requirements

Whilst prior catering experience would be advantageous, prior knowledge and experience is not a requirement.

What you will learn

This course will cover the various aspects of food safety to ensure a sound understanding to ensure food is received, stored, prepared, cooked and served safety.

How you will learn on this course

A range of teaching techniques will be used to address the various learning styles and abilities – please advise at the point of registration and to the trainer if you require any support.

How you will be assessed on this course

1. To know the common symptoms of food poisoning and which groups of people are more vulnerable. 2. To know the most common allergenic foods. 3. To know that there are three types of contamination and be able to name them. 4. To know how food is contaminated and how to minimise contamination. 5. To know what cross contamination is and how it can be controlled. 6. To identify the ideal conditions for bacterial growth. 7. To know what the temperature should be for the fridge, the freezer, cooking, reheating, hot holding and disinfection. 8. To know what the danger zone is. 9. To name methods of preserving food. 10. To know the difference between a use by date and a best before date. 11. To know how food should be stored. 12. To know how a commercial kitchen should be designed . 13. To understand the role of an Environmental Health Officer (EHO), what powers they have and what action they can take. 14. To know the legal requirements of a food handler. 15. To identify the benefits of effective food safety . 16. To identify the various definitions associated with food safety.

Level 3 Award in Food Safety. The college will also be able to advise you on further accredited and non accredited courses to assist in your personal career development. Additional information

At the beginning of the course, you will have an induction to the College and the course. Your tutor will ask you to complete an Individual Learning Plan (ILP) and agree your personal learning goals. All documents are a requirement of the Funding Agency, who expect that learners who enrol on a course leading to a qualification will take that qualification at the College. All students on courses funded by the ESFA must complete a Learning Agreement and ILP.
