Max. 1 teen (11+) per adult. An opportunity to spend quality time with your teen, discover different techniques required to produce a range of biscuits, cakes, pastries and breads including an opportunity to have a go at some basic cake decorating skills. Students will be able to experience a variety of ingredients and explore the use of different baking tins. Copies of the recipes baked each week will be available on the VLE. (Paper copies can also be made available upon request) Please note that at the beginning of the course learners will take part in an induction to the College and the course. They will be asked to complete a Student Learning Record (SLR) which will help learners to reflect and monitor their progress. The tutor will use this information to check learning and plan their lessons.
Lots of enthusiasm and a keen interest in baking. Students will be expected to read and follow simple recipes. Picture, step by step recipes can be produced for those who need extra support.
What you will learn
The course will cover creaming, whisking, rubbing in and melting techniques and include making fairy cakes, shortbread biscuits, breads and buns. Students will also be given the opportunity to experience basic decorationg skills. By attending this course, students will be able to increase their confidence in the kitchen.

How you will be assessed on this course
1. State 2 or more ways to work safely and hygienically in a kitchen environment. 2. List the 4 different techniques to make cakes and biscuits 3. Identify equipment required for weighing and measuring ingredients 4. Use the creaming method and follow recipes to make small sponge cakes. 5. Make a Swiss roll using the whisking technique 6. Explain the theory of yeast doughs and state how the temperature of the liquid added can affect the growth of the yeast. 7. Demonstrate 2 ways of testing for cakes to be baked correctly. 8. Demonstrate how to test that bread is baked 9. Line baking tins and trays to ensure mixtures do not stick. 10. Make and pipe butter icing

Students need to bring 1. an apron for yourself and your child 2. a dish cloth 3. 2 tea towels. 4. A container to take baked goods home in 5. You also need to wear suitable footwear, flat closed shoes to comply with the college health and safety policy.
